Process & Profile
Bozal Guías De Calabaza is a rare vegetarian interpretation of the traditional Sacrificio mezcal from Oaxaca. Produced in Río de Ejutla using Espadín agave, the piñas are roasted in earthen pit ovens, crushed by a stone tahona, and double-distilled in copper pot stills. During the second distillation, instead of meat as in traditional Sacrificio mezcals, a basket of pumpkin stems (guías de calabaza), along with plantains, oranges, pineapple, pumpkin seeds, and the native herb chepiche, is suspended in the still. This unique process imparts layered vegetal, herbal, and fruity notes to the mezcal, resulting in an expressive small-batch release rooted in ancestral celebration.
